Not Your Grandma’s Bran Muffin

I really love muffins, but unfortunately in these hard days when your average muffin is the size of a planet and packs an average of 500 calories a pop, you can really only trust a muffin coming out of your own muffin tin. This morning I decided to bake up a batch of bran muffins, making up the ingredients as I went. These are super easy to make and are my new go to work week breakfast.

Banana Oat Bran Muffins

1 1/4 cup of oat bran

1/2 cup of apple sauce

1/4 cup of almond milk

1/2 Tbls baking powder

2 Tbls Brown Sugar

1 Tbls agave or honey

1 mashed banana

A dash of vanilla

Mix all ingredients and pour into muffin tins. Bake at 425 for about 20 minutes. Makes 6 muffins.

This mornings breakfast kept with the oat bran theme: a bowl of oat bran with a peanut butter spoon.

My next project is getting myself to the gym. This could take a while…
